Serving Up Hope & Love - Erin Gibson
Meet Our Staff - February 2008

Erin coordinates and manages meals for thousands

Day after day in our kitchen, Erin Gibson displays a wealth of experience gained with a degree in culinary arts and six years in the military working in food services. She mixes laughter, efficiency, and a serious love for the Lord in her position as Food Services Supervisor.

A recent addition to our staff, Erin slid right into the kitchen and its busy pace as if it were her long lost home. Her mother was involved in serving the homeless back in Iowa. Erin helped her sometimes and was impressed with the feelings she experienced in the gift of giving. So, when a job opportunity came up here in Albuquerque at ARM, she applied immediately.

Her daily work is laid out by the need for exact timing. “Getting hundreds of meals out daily is a feat of prayer, faith, planning and teamwork,” Erin says. One of her favorite ministries is the food box distribution. “We build a box of food according to the size of each family. It is a very personal ministry as we sit down and share the Word with the families and find their hearts are touched by it. Often when I talk with these families I realize how blessed I am and how little they have heard about our loving God.”

She says, “the food that comes in around the holidays is wonderful, but gone quickly.” When asked how her team manages she replied, “We never know if it will be 300 people or more at any one meal. We make do and get creative at times to manage to feed all that come to us. This morning we had over 400 guests just for breakfast.”

Her vision for how the homeless population can be served better is a long list; but she says, “Most of these people do not choose to be homeless. They may have made some wrong choices, found solace in people and habits that are empty, but most of them really do want a better way of life, and we have to give them that chance!”

Erin’s passion for her work, her Lord and the people she serves every day is inspiring. We appreciate her so very much – Thank you Erin!

"We ought therefore to show hospitality to such men so that we may work together for the truth."

Romans 12:13
